This time a dish that isn't vegetarian, but mostly contains vegetable protien.
One Pot Lamb Dinner (Soup)
1/2 yellow onion 1 medium carrot 1 stalk celery 1/2 cup cabbage 1 can of mixed beans (mine was chickpea, kidney beans, black eyed peas and romanos) 1 can of V-GO (v8 juice) the V-GO can refilled with water 2/3 cup lamb stock lamb bone with leftover meat attached (optional) 1/3 cup macaroni noodles 1 tbsp paprika 1 tsp thyme 4 cloves garlic 2 tbsp mint jelly (no, I'm not kidding) salt and pepper to taste
Dice vegetables and garlic and add to pot with 1 tbsp lamb stock, cook until slightly softened. Add remaining ingredients and simmer until the vegetables and macaroni are fully cooked. Serve with soft bread and butter, or corn muffins.
Note: Yes, the mint jelly sounds like a silly ingredient, but it really does make this soup. Lamb and mint are a classic combination, and the sweetness of the jelly truly mellows the full flavor of the broth.
